Swedish Cardamom Buns—Kardemummabullar—are a beloved fika (coffee break) tradition. These soft, aromatic buns are fragrant with cardamom, less sweet than cinnamon rolls, and beautifully twisted. Perfect with a cup of strong coffee.

Instructions

1

Activate the Yeast

In a bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let sit for 5 to 10 minutes until foamy.

2

Make the Dough

In a stand mixer, combine flour, remaining sugar, salt, and cardamom. Add yeast mixture, softened butter, and egg. Knead for 8 to 10 minutes until smooth and elastic.

3

First Rise

Cover and let rise in a warm place for 1 to 1½ hours until doubled.

4

Make the Filling

In a bowl, mix softened butter, sugar, and cardamom.

5

Shape the Buns

Roll dough into a 12×16-inch rectangle. Spread filling evenly. Fold the dough in half. Cut into 12 strips. Twist each strip and coil into a bun shape. Place on a parchment-lined baking sheet.

6

Second Rise

Cover and let rise for 30 to 45 minutes.

7

Bake

Preheat oven to 375°F (190°C). Brush buns with egg wash and sprinkle with pearl sugar. Bake for 15 to 18 minutes until golden brown.

8

Cool

Cool on a wire rack. Serve warm or at room temperature.
