Stuffed Bagel Bombs (Bagel Bites Grown Up)

Ingredients

Makes 8-10 bagel bombs.

For the Dough:

  • 1 cup (240ml) warm water (110°F / 45°C)
  • 1 packet (2¼ tsp) instant yeast
  • 1 tbsp sugar
  • 2½ cups (310g) all-purpose flour
  • 1 tsp salt

For the Boil:

  • 8 cups water
  • 2 tbsp honey or sugar

For Topping:

  • 1 egg, beaten (egg wash)
  • Everything bagel seasoning or flaky salt

Filling Option 1 — Everything Cream Cheese:

  • 4 oz (115g) cream cheese, softened
  • 2 strips bacon, cooked and crumbled
  • 1 green onion, finely sliced

Filling Option 2 — Pizza:

  • ¼ cup pizza sauce
  • ¼ cup shredded mozzarella
  • 20 slices mini pepperoni

Bagel bombs are what happens when bagels meet stuffed bread. Soft, chewy dough wrapped around your favorite filling. Cream cheese and bacon? Yes. Pizza? Also yes. Bite-sized. Freezer-friendly. Dangerously good.

Make Dough

Mix warm water, yeast, and sugar. Let sit 5 minutes until foamy.

Add flour and salt. Knead 5-7 minutes until smooth. Cover and rise 1 hour until doubled.

Make Fillings

Mix cream cheese, bacon, and green onion for option 1.

For option 2: combine sauce, cheese, and pepperoni.

Preheat & Prep

Preheat oven to 425°F (220°C). Line baking sheet with parchment. Bring 8 cups water and honey to a boil.

Shape & Fill

Divide dough into 8-10 pieces. Flatten each into a 3-inch circle.

Place 1-2 tablespoons of filling in center. Gather edges and pinch to seal tightly. Roll into a smooth ball.

Boil & Top

Drop each bagel bomb into boiling water for 30 seconds. Remove with slotted spoon.

Place on baking sheet. Brush with egg wash. Sprinkle with everything bagel seasoning or salt.

Bake

Bake 15-18 minutes until golden brown.

Serve

Cool 5 minutes. Serve warm. Watch them vanish.
