Ingredients

Ingredients

  • 8 cups (about 300g) stale sourdough bread, cut into 1-inch cubes
  • 1 lb (450g) breakfast sausage, cooked and crumbled
  • 1 cup (115g) shredded cheddar cheese
  • 1 cup (115g) shredded mozzarella or Monterey Jack cheese
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 8 large eggs
  • 2 cups (480ml) whole milk
  • ½ cup (120ml) heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Sourdough Breakfast Strata is a savory, make-ahead casserole that’s perfect for holiday mornings, brunch gatherings, or weekend meal prep. Layers of sourdough bread, eggs, cheese, sausage, and vegetables soak overnight, then bake into a golden, puffy, crowd-pleasing dish.

Instructions

1

Prepare the Bread

If using fresh bread, spread cubes on a baking sheet and toast at 300°F (150°C) for 10 minutes to dry out.

2

Layer the Strata

Grease a 9×13-inch baking dish. Layer half the bread cubes, half the sausage, half the onion and bell pepper, and half the cheese. Repeat with remaining ingredients.

3

Make the Custard

In a bowl, whisk together eggs, milk, cream, salt, pepper, garlic powder, and mustard powder.

4

Soak Overnight

Pour the custard evenly over the layers. Press down gently to submerge the bread. Cover and refrigerate for at least 4 hours, or overnight (8 to 12 hours).

5

Bake

Preheat oven to 350°F (175°C). Remove strata from the refrigerator 30 minutes before baking. Bake uncovered for 45 to 55 minutes until puffed, golden brown, and a knife inserted in the center comes out clean.

6

Rest and Serve

Let rest for 10 minutes before serving. Garnish with fresh parsley.

Pro-Tips for Picture-Perfect Sourdough Breakfast Strata

  • Use Stale Sourdough: Fresh bread can become soggy.
  • Soak Overnight: Essential for flavor and texture.
  • Don’t Overbake: Strata should be set but still moist.
  • Customize Add-Ins: Add spinach, mushrooms, or cooked bacon.

This Sourdough Breakfast Strata is hearty, cheesy, and perfect for feeding a crowd.
