Add the salt to the dough. Knead using a dough hook on medium-low speed for 8-10 minutes, or by hand on a lightly floured surface for 12-15 minutes, until the dough is very smooth, tacky but not overly sticky, and passes the windowpane test.

Place in a lightly oiled bowl, cover, and let rise at room temperature for 4-6 hours, until increased by about 50-75%. The enriched dough will not double in size as quickly as a lean dough.

Shape the Rolls

Gently turn the dough out onto a clean work surface. Divide it into 12 equal pieces (about 85-90g each). Shape each piece into a tight, smooth ball by pulling the edges underneath and pinching to seal. Place the shaped balls into a greased 9×13 inch baking dish, arranging them in 3 rows of 4. They should be touching.

Cover the pan loosely with plastic wrap or a damp towel. Let the rolls proof at room temperature for 2-4 hours, until puffy, nearly doubled, and the dough springs back slowly when gently pressed. For a slower, more flavorful rise, you can proof in the refrigerator for 8-12 hours. If baking from cold, let them sit at room temperature for 1 hour before baking.

Preheat oven to 350°F (175°C). Bake the rolls for 22-26 minutes, until the tops are a deep golden brown. If they are browning too quickly, tent loosely with foil.
